Our First Pizza Attempt: Roasted Garlic Pizza

Tonight my hubby and I attempted to make our first pizza–and it was a great success! We usually have pizza delivered, or cook up a frozen one when we are in the mood because we don’t have time to make one from scratch. But when we went grocery shopping yesterday, I saw a refrigerated ball of pizza dough on sale at Publix…so we decided that Monday we would make our first homemade pizza.

I used a recipe I found through Pinterest for my inspiration. I made a few minor changes and it came out delish!

The best part is the roasted garlic, so as long as you make that your base, you can put on whatever toppings you please and it should turn out great.

This pizza was soooo good that we just wanted to keep eating more! But we resisted, only because we are looking forward to having them as leftovers tomorrow ūüėČ

Try it out–you won’t be¬†disappointed. And feel free to change up the ingredients to your liking.

Roasted Garlic Pizza

Serves 3

Ingredients:

  • 1¬†head garlic
  • Olive oil
  • Flour, for dusting
  • 1¬†package refrigerated¬†pizza¬†dough, at room temperature
  • Oregano
  • Salt
  • Black pepper
  • Garlic powder
  • 1/2¬†pound fresh mozzarella, sliced
  • 8 ounces mushrooms, sliced
  • 3 ounces spinach
  • 10 ounces diced tomatoes (I used Cento brand), drained a bit to get rid of some of the liquid
  • 1-2 vine ripe tomatoes, sliced
Directions:

  1. Preheat the oven to 350 degrees.
  2. Peel the outer layers of the garlic skin away from the garlic, leaving the cloves intact. Cut about 1/4 inch off the top of the garlic head, exposing the tops of the cloves. Drizzle with olive oil and wrap in aluminum foil. Roast in the oven for 45 minutes.
  3. Remove garlic from oven and let cool for easy handling. Once cooled, remove the skin from the cloves and mash into a paste.
  4. Raise oven temperature to 425 degrees.
  5. Using a rolling pin dusted with flour, roll out the pizza dough. Place dough on a lightly oiled cookie sheet or pizza stone and drizzle with olive oil. Spread roasted garlic evenly onto the dough. Then sprinkle some oregano.
  6. In a pan, saute the mushrooms and spinach in olive oil. Season with salt, pepper and garlic powder. Once the spinach is wilted and the mushrooms are lightly browned add the diced tomatoes. Cook on medium high for about five minutes, just to evaporate some more of the tomato liquids.
  7. Spread the pizza sauce evenly over the dough. Top with mozzarella and sliced tomatoes.
  8. Bake¬†until crust is golden and cheese is bubbling, about 15 minutes. Remove from oven. Let cool about 5 minutes and serve! Happy Eating ūüėÄ

Banana Cake with Whipped Cream Cheese Frosting

I can’t believe that this is my first dessert recipe on the blog. I looked back and was shocked to see all “real” food recipes.

When I was younger, all I ever baked were desserts. Cakes, cookies, brownies, and so on and so on.

I guess now that I’m married and don’t have mom to cook for me everyday, I spend my time just cooking the essentials. For dessert we usually just have ice cream or use brownie/cookie mixes (if we even to get to dessert–which most days we don’t). But I have¬†definitely¬†picked up healthier eating habits now that I am sitting down all day instead of walking around campus from class to class. I’m not burning my calories like I used to–oh what I would do to be young again ūüėČ

Anyway, back to the dessert I prepared today…I convinced myself that the three bananas I had left sitting on the kitchen were the perfect excuse to make something sweet before the bananas turned completely black.

This recipe turned out DELICIOUS!! I love how soft the cake came out and the sweetness of the frosting makes the whole cake meld perfectly together. It was the first time I made homemade whipped cream and I will never buy it again. I really recommend this recipe; it is AMAZING ūüôā

Start by preheating the oven to 350 degrees. Grease an 8×8 pan (or whatever size you have on hand).

In a large bowl, cream together the butter and sugar until smooth.

Beat in the eggs, one at a time, then stir in the sour cream and vanilla.

Combine the flour, baking soda and salt in a medium bowl; stir into the batter.

Finally, mix in the mashed banana. Spread evenly into the prepared pan.

Bake for about 30 minutes (more or less depending on the size of your pan), until a toothpick inserted into the center comes out clean.

Allow cake to cool completely.

For the frosting, in a large bowl combine cream cheese, sugar, salt and vanilla. Beat until light and fluffy. Set aside.

In another medium bowl, beat whipped cream until stiff peaks form. Fold whipped cream into cream cheese mixture.

  • 1 cup confectioners‚Äô sugar
  • 1/8 tsp salt
  • 1 tsp vanilla
  • 1 ¬Ĺ cups heavy whipping cream
