Banana Cake with Whipped Cream Cheese Frosting

I can’t believe that this is my first dessert recipe on the blog. I looked back and was shocked to see all “real” food recipes.

When I was younger, all I ever baked were desserts. Cakes, cookies, brownies, and so on and so on.

I guess now that I’m married and don’t have mom to cook for me everyday, I spend my time just cooking the essentials. For dessert we usually just have ice cream or use brownie/cookie mixes (if we even to get to dessert–which most days we don’t). But I have definitely picked up healthier eating habits now that I am sitting down all day instead of walking around campus from class to class. I’m not burning my calories like I used to–oh what I would do to be young again 😉

Anyway, back to the dessert I prepared today…I convinced myself that the three bananas I had left sitting on the kitchen were the perfect excuse to make something sweet before the bananas turned completely black.

This recipe turned out DELICIOUS!! I love how soft the cake came out and the sweetness of the frosting makes the whole cake meld perfectly together. It was the first time I made homemade whipped cream and I will never buy it again. I really recommend this recipe; it is AMAZING 🙂

Start by preheating the oven to 350 degrees. Grease an 8×8 pan (or whatever size you have on hand).

In a large bowl, cream together the butter and sugar until smooth.

Beat in the eggs, one at a time, then stir in the sour cream and vanilla.

Combine the flour, baking soda and salt in a medium bowl; stir into the batter.

Finally, mix in the mashed banana. Spread evenly into the prepared pan.

Bake for about 30 minutes (more or less depending on the size of your pan), until a toothpick inserted into the center comes out clean.

Allow cake to cool completely.

For the frosting, in a large bowl combine cream cheese, sugar, salt and vanilla. Beat until light and fluffy. Set aside.

In another medium bowl, beat whipped cream until stiff peaks form. Fold whipped cream into cream cheese mixture.

Serves 8-10

Ingredients:

For the Banana Cake

  • ½ cup butter, softened
  • 1 ½ cups white sugar

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • 3 ripe bananas, mashed

For the Whipped Cream Cheese Frosting

  • 1 (8 oz) package cream cheese, softened
  • 1 cup confectioners’ sugar
  • 1/8 tsp salt
  • 1 tsp vanilla
  • 1 ½ cups heavy whipping cream

Directions:
